Strawberry panna cotta

- 15 gr. instant gelatin
- 100 ml peach juice
- 100 gr. brown sugar
- 300 gr. strawberries
- 100 ml milk
- 500 ml cream with a fat content of 20-22%
- 2 tsp vanilla sugar
Strawberry panna cotta recipe
Pour 10 gr. gelatin with milk (preferably cold), let stand for 15 minutes so that the gelatin swells.
Pour the remaining 5 grams of gelatin with peach juice and also set aside so that it swells.
Pour the cream into a saucepan, add vanilla and brown sugar to them.
Stir the cream, put on fire and bring to a boil, stirring occasionally. Now add gelatin, which we diluted in milk. We mix everything so that the gelatin is completely dissolved, and turn off the heat.
We put the strawberries in a blender, we also add sugar, pour in the gelatin dissolved in peach juice. We punch this mixture well so that everything is completely homogeneous. We put the mixture on the stove and heat up to 60 degrees, mix all the time.
Pour the cooled cream into glasses or molds, filling them at least halfway.
We put the glasses in the refrigerator, after the panna cotta has solidified, add the strawberry puree and put the glasses back in the refrigerator to completely solidify.
