Recipe for Classic English Orange Cookies
Place the butter in a small bowl and beat it well with a wooden spoon.
Add powdered sugar, flour and orange zest to the butter, beat all these ingredients gently and very well so that you end up with a homogeneous soft dough.
Knead the resulting dough into a ball, wrap in cling film and refrigerate for 1 hour.
When the required time has passed, roll out a layer of dough no more than 3 mm thick and cut out various figures of the future orange cookies from it.
Put the resulting figures on a baking sheet, previously greased with oil, and put in an oven preheated to 180 degrees for 15 minutes or until the cookies turn golden.
Now mix all the ingredients for the glaze, if the mixture is a little thick, then add more juice.
Melt the chocolate in a water bath. Pass the cottage cheese through a sieve and mix it together with powdered sugar and chocolate.
Lubricate one cookie with the resulting filling and cover it with the second, after which we pour everything over with icing.
