Mashed potatoes with yogurt and basil
Ingredients
  • 800 g potatoes
  • 125 ml natural yoghurt
  • Bunch of green basil
  • 3 garlic cloves
  • 2 tbsp. l. olive oil
  • 3 art. l. grated parmesan salt
This puree is the perfect side dish for fish or roasted vegetables. Instead of basil, you can use any spicy greens: parsley, dill, cilantro, marjoram.

Peel potatoes and cut into 2-4 pieces. Peel the garlic. Place garlic and potatoes in a wide saucepan. Pour boiling water over, bring to a boil, salt and cook over medium heat, covered, until tender, 25-30 minutes. 2

Drain the water and leave the potatoes in the pan, uncovered, for 3 minutes to dry out a little. Mash into a puree with a masher. Pour in Parmesan, stir, add yogurt and olive oil. Beat the puree with a whisk or a hand mixer on low speed. 3

Finely chop the basil leaves and add to the puree, mix thoroughly.
