Sweet Pepper Curry
Ingredients
  • 3 multi-colored sweet peppers
  • 3 medium potatoes
  • 1 large onion
  • 150 g coconut milk
  • zest and juice of 1 lime
  • 1 small bunch of cilantro
  • 1-3 tsp red curry paste
  • fish sauce or salt
  • vegetable oil
We are used to the fact that curry is something complex, meaty, including at least 15 spices. But curries are very different. This is a simple curry that takes less than half an hour to prepare.

1. Wash the potatoes with a brush, cut them in half crosswise and lengthwise into 4-6 parts. For sweet peppers, remove the core and partitions, cut the flesh into approximately the same pieces as potatoes. Onion cut into thin feathers.

2. Pour oil into a deep frying pan, put vegetables and fry over high heat, turning often, for 10 minutes.

3. Pour in about 150 ml of boiling water, close the lid, simmer for 10 minutes. Add curry paste and coconut milk, stir, cook uncovered for 5 minutes.

4. Before serving, season with salt (sauce), lemon zest and juice, sprinkle with chopped cilantro.
