Squash caviar

- Zucchini - 1 kilogram
- Eggplant - 2 pcs.
- Onion - 2 heads
- Bulgarian pepper - 4 pcs.
- Tomato juice - 1 cup
- Carrots - 2 pcs.
- Vegetable oil
- Salt
- Pepper
Recipe for zucchini caviar
We thoroughly wash and peel the vegetables, then cut into small cubes.
We heat the pan with vegetable oil and fry the chopped onion and carrot on it for 2 minutes, then add the eggplant and simmer everything together for 10 minutes.
Now add chopped zucchini to the pan and simmer them for 30 minutes, closing the pan with a lid. After the time has elapsed, open the lid and continue cooking until the excess moisture has evaporated. Add bell pepper, tomato juice, salt and pepper to zucchini caviar. We continue to simmer until the desired density of caviar.
We beat the vegetables with a blender, you can also use a pusher, after which we return everything back to the pan and simmer for a few more minutes. You can not chop the caviar, it turns out very tasty anyway.
