Ingredients
  • Dried porcini mushrooms - 100 gr.
  • Onion - 2 heads
  • Carrot - 1 pc.
  • Beans - 100 gr.
  • Potatoes - 4 pcs.
  • Sour cream
  • Greenery
  • Salt
  • Pepper
Mushroom yushka is most often prepared using porcini mushrooms, but others can also be used.

We pre-soak the beans for 6-8 hours, it is better to soak immediately at night. Now you need to rinse and boil the beans for 60 minutes.

Pour dried mushrooms with water to soak (3 hours is enough).

We wash the swollen mushrooms, and filter the remaining liquid. Add cold water to the remaining liquid after the mushrooms and boil the porcini mushrooms for 1 hour. Remove the cooked mushrooms from the pan with a slotted spoon.

Add boiled beans to mushroom soup. Grind the potatoes and also add it to the soup, salt and pepper to taste and cook over medium heat for 20 minutes.

Let's prepare the frying, for this we pass the onion, add the grated carrots and mushrooms to it. Simmer everything for 10 minutes.

Add the resulting roast to the mushroom soup and continue cooking for 15 minutes. At the very end of cooking, add chopped greens, season with sour cream and let it brew a little before serving.
