  • Half a medium chicken carcass
  • 100 gr. orzo
  • 3 chicken eggs
  • 1 lemon
  • 20 gr. dill
  • ½ tsp salt
Greek avgolemono soup is prepared surprisingly simply, it turns out very tasty. This soup has many different variations, but now we will prepare the most delicious and simple avgolemono soup.

First of all, prepare the chicken broth. To do this, fill the chicken with water and add a small amount of salt there. Ready chicken can be used for other dishes, we only need the broth.

Pour the orzo pasta into the broth and cook a few minutes less than required. You can read the instructions for cooking certain types of pasta on the packaging.

Squeeze the juice from the lemon and break the chicken eggs into it. Lime juice can be used instead of lemon.

Beat the eggs with a fork until you get a homogeneous mass.

Take 1 ladle of hot chicken broth and pour it into the lemon-egg mixture, mix everything. Now take 1 more ladle of broth and stir again. Now take a container with eggs and pour it into the broth, gently heat the soup until it thickens. Be careful not to let the soup boil so that the eggs do not curdle.
