Recipe for beef with vegetable salsa
1. Heat a frying pan or grill pan to high heat. Pour in vegetable oil. Salt and pepper the steaks and fry for 2 minutes on each side until the meat is golden brown. Then transfer the steaks to a baking sheet covered with parchment and place in an oven preheated to 180 ° C for 10-15 minutes, depending on which degree of roasting you prefer.
2. While the beef is in the oven, prepare the vegetable salsa. To do this, cut the tomatoes into 4 parts, cut the cucumbers into thin slices, the shallots into thin rings or slices. Mix vegetables in a deep bowl, add lemon juice, paprika, cumin, water, olive oil, a pinch of salt and chopped basil. Mix everything well and set aside.
3 Remove the cooked meat from the oven, let it rest for 2-3 minutes, then cut into thin slices across the grain and serve with vegetable salsa.
