Filet mignon in honey caramel with sweet pepper
Ingredients
  • 1 kg pork tenderloin
  • 4 stalks lemongrass
  • 4 tablespoons soy sauce
  • A piece of ginger approx. 2 cm
  • 4 tablespoons cane sugar
  • 3 tablespoons of acacia honey
  • 3 tablespoons vegetable oil
  •  3 sweet peppers (1 yellow and 2 red)
  • 1 lime
  • 2 tablespoons peanut butter
  • chopped cilantro
  • Salt
  • Pepper
Very tasty holiday dish with tender pork.

Meat cut into slices. Peel the lemongrass and cut into circles. Cleanse the ginger. Peel the sweet pepper from the stalks and seeds and cut into strips. Cut the zest from the lime and squeeze out the juice.

In a saucepan, heat the vegetable oil and over high heat, stirring, fry the meat for 5 minutes. Add sugar and honey and let the meat caramelize for 5 minutes. Pour in soy sauce and lime juice, add lemongrass and ginger, salt and pepper to taste.

Cook 5-10 min.

Put pepper in a saucepan and pour in 200 ml of water. Add peanut butter, stir and cook covered for 10 minutes.

Sprinkle with cilantro and lime zest before serving.
