Separate yolks and whites separately. The yolks can be placed in a small container, convenient for rubbing, in a porcelain bowl.

Add a quarter teaspoon of mustard there, add salt to your taste and mix, you can use a whisk, or you can use a spatula. Gradually pour in all the sunflower oil by a teaspoon, continuously stirring the yolks.

When the consistency becomes thick and homogeneous, add the amount of vinegar indicated in the recipe. If the sauce is still too thick, then you can add a tablespoon of warm water.
