Ingredients
  • Flour - 250 gr.
  • Sugar - 70 gr.
  • Butter - 120 gr.
  • Salt on the tip of a knife
  • Vanillin - 1 sachet
  • Baking powder - 1 sachet
  • Peaches - 500 gr.
  • Fat-free cottage cheese - 700 gr.
  • Chicken eggs - 3 pcs.
  • Butter - 100 gr.
  • Sour cream - 200 gr.
  • Sugar sand - 200 gr.
  • Semolina - 70 gr.
  • Zest of one lemon
  • Cognac or rum - 4 tbsp.
  • Baking powder - 1 sachet
  • Vanillin - 1 sachet
Cheesecake with peaches is a light version of the classic recipe, it turns out very tasty!

First prepare the dough, for this mix all the indicated ingredients and knead the dough, if necessary, add a little water. Roll the resulting dough into a ball and send it to the freezer for 30-35 minutes.

Make a curd cream, for this, separate the yolks from the proteins, beat the butter with vanilla and sugar, add the lemon zest, separated yolks and rum.

In a separate container, mix semolina with pudding powder and baking powder, add all this to the yolk mass. Rub the cottage cheese with sour cream and add to the cream. Whisk the whites with a pinch of salt and add to the curd cream.

Grease a baking dish with oil, roll out the chilled dough and put it on the form, making a small rim around the edges.

Peel the peaches and cut them into slices, by the way, since now it's time for strawberries, you can make a cheesecake with strawberries, it will turn out no worse than with peaches.

Lay the peach slices on the dough, and put the curd cream on top.

Preheat the oven to 180 degrees and send the cheesecake into it for 40 minutes. Once the time has elapsed, turn off the oven, cover the cheesecake with foil and leave in the oven for another 10 minutes.

Sprinkle the finished cheesecake with peaches with powdered sugar and serve.
