Ingredients
  • 600 gr. potatoes
  • 500 gr. lamb (can be replaced with beef)
  • Red ground pepper
  • Greens to taste
  • 4 garlic cloves
  • Salt
  • Bay leaf
  • 200 gr. Luke
  • 200 gr. carrots
  • 300 gr. eggplant
  • 500 gr. tomato
Chanakhi is a traditional dish of Georgian cuisine, but it is not unique to Georgian cuisine. The dish is lamb stewed with vegetables in a clay pot. The most important thing is to use only fresh vegetables and no artificial seasonings.

Cut eggplant into cubes, salt them and leave for 30 minutes in order to remove the bitterness, and then rinse and squeeze.

Cut lamb into small pieces.

Cut the tomatoes into cubes.

Grate carrots on a coarse grater.

Cut potatoes into cubes as well.

Finely chop the onion.

Next, lay out all the ingredients in layers in pots. We spread the meat on the very bottom, potatoes on it, then eggplants, onions on the eggplants, carrots on top of the onions, put half the chopped tomatoes on the carrots, add a little salt and pepper.

In order for the dish to turn out more liquid, you should add broth or water.

We put the pots in the oven and simmer for 1.5 - 2 hours at a temperature of 180 degrees.

About 15 minutes before the chanakhi is fully cooked, add the remaining tomatoes, squeeze a clove of garlic into each pot and add a bay leaf.

After the chanakhi is fully cooked, sprinkle with chopped herbs.
