Pancakes "Mom's" (on kefir)
Bakery
- sour kefir (yogurt) - 1 liter
- eggs - 4 (large)
- salt - 2/3 tablespoon
- soda - 2/3 tablespoon
- flour (sifted)
- vegetable oil - 4 tbsp. spoons
- sugar - 2-3 tablespoons
- vegetable oil for frying (or a piece of lard)
- butter for greasing pancakes
This recipe is our mommy's signature dish. Tastier than mom's pancakes, I personally have not tried it yet. Eating these pancakes is delicious with both sweet (sour cream with sugar, condensed milk, jam), and salty “sauces”.
Important: the “older” the kefir, the tastier the pancakes!
Recipe for pancakes "mother's" (on kefir)
Preparing the dough for fluffy pancakes. Mix kefir (sour milk), salt, soda. Soda is quenched with kefir, we do not use vinegar. Add eggs to the mixture, mix. Slowly start adding flour.
If using a mixer, it is important not to beat the dough. Beat exactly until the moment when all the lumps disappear (no more than a minute after all the flour is in the dough). We add enough flour so that the consistency of the pancake dough is like that of thick sour cream.
Add oil, mix again and leave the dough alone (20 minutes). We heat the pan and start frying pancakes in vegetable oil. Pour the batter into a ladle.
During the frying of pancakes, a large number of bubbles appear on their surface - a sign that we got the right dough. When the pancake is removed from the pan, immediately soak it with a small piece of butter. From this, pancakes become even tastier and more tender.
