Pancakes with cottage cheese and blueberries

- 1 glass of kefir (1%)
- 1/2 cup water
- 2 eggs
- 250 ml glass of flour
- a pinch of soda
- a pinch of salt
- tablespoon of sugar
- vegetable oil 1 tbsp in the dough
- 1/2 cup fresh frozen (or fresh) blueberries
- 3 tbsp sugar
- 2-3 tablespoons of sour cream 20% fat
- 200 gr cottage cheese (at least 9% fat)
Everyone in our family loves such pancakes - both children and adults. Very tasty (and healthy!!!) blueberry curd filling perfectly complements the taste of such a truly homemade dish as pancakes. In this recipe, it is desirable to use not too thin pancakes. It is necessary to make them about 2-3 mm, because a too thin pancake from the filling will quickly become sour, and the look of the pancakes will no longer be as appetizing as we would like.

We mix the ingredients for the pancake dough and fry the pancakes in vegetable oil. The recipe for pancakes I gave is not the cheapest, but, on the other hand, very tasty. In principle, you can use any recipe, the main thing to remember is that pancakes should not be too thin.

We mix the ingredients for the pancake filling, try not to crush all the blueberries, otherwise there will be a lot of juice, and the filling for our pancakes will turn out to be very liquid.

We spread the filling on the pancakes, roll the pancakes with a tube (or an envelope) and serve!
