Eggplant baked with cheese

- 150 gr. hard cheese
- 300 ml tomato sauce
- 2 garlic cloves
- 1 head of onion
- 4 medium tomatoes
- 2 eggplant
- Olive oil
- Rosemary, basil and thyme to taste
Recipe for eggplant baked with cheese
Cut the tomatoes into circles, eggplant can also be cut into circles or as you like. We take a little salt and sprinkle eggplants with it, and leave them for 10 minutes. After the time has passed, rinse the eggplants under cold water.
We clean the carrots and onions, then finely chop. Fry the vegetables in a frying pan with the addition of olive oil until the first soft state. Now add the tomato sauce and bring everything to a boil. Take the pan off the fire.
We spread the resulting mixture on the bottom of a ceramic or glass baking dish. Lay vegetables on top.
Now let's start preparing the spicy seasoning. Mix ground pepper, salt, olive oil, thyme and rosemary, pour the resulting mixture over vegetables.
Cover everything with foil and put the mold in the oven for 1 hour. We bake at a temperature of 200 degrees.
5 minutes before the end of cooking, sprinkle the vegetables with grated cheese.
