- 3 medium eggplants
- 2 tomatoes
- 3 garlic cloves
- 4 tablespoons mayonnaise
- 30 grams of fresh herbs
- Vegetable oil
- Salt and pepper to taste
This is a very popular snack. The combination of eggplant and tomato can please even the biggest gourmet.
Recipe for Eggplant Rolls with Tomatoes

Prepare the eggplants, they must be peeled and cut into thin slices along the length.

In a frying pan heated with vegetable oil, fry the eggplant on both sides. Place them on a paper towel to soak up the excess oil.

Prepare the sauce. In mayonnaise, add crushed garlic, greens, pepper. Mix everything thoroughly. Cut the tomatoes into thin small slices.

Apply sauce to each eggplant and put a piece of tomato on the edge, roll the eggplants into tight rolls. The finished dish is best served chilled and garnished with herbs.
