Azu in Tatar
Second courses
- Beef - 500 gr.
- Pepper to taste
- Salt - 1 tsp
- Water - 1-1.5 cups
- Vegetable oil - 6 tbsp. spoons
- One large onion
- Potatoes - 4-5 pcs.
- 2 pickles
- 1/3 cup tomato juice, or 2 small fresh tomatoes, or 2 tablespoons tomato sauce
The recipe for azu in Tatar
To prepare the basics in Tatar, you will need 2 large pans.
Chop the onion as finely as possible and put it in a frying pan heated with oil, stirring occasionally, bring it to browning and transparency.
Add tomato paste to the onion (or one of the above), fry everything together (with tomato paste for half a minute, with tomato juice or tomatoes - 3-5 minutes over high heat).
Cut the meat into small sticks.
Heat a second frying pan with 2 tablespoons of oil, add the meat and fry until a crust forms.
Add onion with tomato to the meat and pour 1 glass of water and add pepper and salt.
Simmer the meat for about 30 minutes.
Grate the cucumbers on a coarse grater and fry in the first frying pan adding a little oil, then add the cucumbers to the frying pan with meat and simmer for about 10 minutes.
Rinse the peeled and diced potatoes from starch.
Heat the vacated pan over maximum heat with the addition of 2 tablespoons of oil, add the potatoes and fry until a small crust appears.
Next, combine the potatoes with meat in one pan and simmer over low heat under the lid for 5-10 minutes.
