Recipe for acacia in batter
To prepare this dish, you first need to make a batter. To do this, sift the flour through a sieve, combine with beaten eggs, milk and vegetable oil. Mix everything thoroughly so that there are no lumps.
Rinse inflorescences (young pods of white acacia are also sometimes used) under running cold water, and then dry on a paper towel.
Pour vegetable oil into a frying pan and heat it well. Dip prepared inflorescences of white acacia in egg-milk batter and put in deep fat. Fry the inflorescences on all sides until a beautiful golden crust is formed.
Lightly dab the toasted white acacia buds with a paper towel to remove excess vegetable oil, and then transfer to a plate.
Sprinkle the battered flowers with icing sugar and serve hot. You can serve this dish with sour cream, jam or yogurt.
